View Full Version : Mashed potatoes? What is your fav receipe?

I have tried Alissa's receipe and it was just okay to me..........has anyone tweeked this receipe or rec'd another receipe. There is one in the Eating without heating book. Does anyone have Juliano's uncookbook? I used to have it and sold it and dont remember if it had a mashed potatoe receipe.

I ordered some raw meals from Cynthia Beavers from purerawcafe in Dallas and the mashed potatoes she sent me with her meatloaf has left me wanting MORE!!!!!!!!!!!!!!!!!!!

Her's includes nuts if I remember correcntly right? I just did cauliflower, olive oil, sea salt, and dried herbs. I did a home made raw mushroom gravy to put on top.

I haven't actually tried these yet, but it'll give you some options....

Mashed "Potatoes"
by RoseLee Calabro

6 C chopped cauliflower
1/4 c flax oil
Spike All Purpose Seasoning to taste

Process cauliflower in a food processor with "S" blade, chop until "grainy". In a large pot, slow cooker, or electric skillet on
the lowest temperature, add oil, spices and cauliflower, stirring and tossing until coated and warmed to 105 degrees.

The Juliano recipe is:

Mashed Potatoes
by Juliano

3 cups chopped cauliflower
1 cup raw cashews
1/2 cup fresh lemon juice
1/2 cup fresh thyme
1 tbsp. minced garlic
1 tbsp. celtic seasoning (?)

Blend cauliflower in blender, using a little lemon juice and add remaining ingredients. If you have a Green Power Juicer, use it instead!

I'm sure you can find some other great variations from people on here too!

I have found parsnips to be the best for mashed potatoes, add some salt, olive oil, black pepper, poultry seasoning, and then I add olive oil and salt on the top like butter, you can make a gravy out of almond milk or cashew cream and some crimini mushrooms, if you like.

The first one I made was Julianos and it was horrible.

The next one was the Boutenkos and that was lovely but not like mashed potato.

The next one was
1 cauliflower
1 cup pine nuts
1/2 lemon juice
lots of fresh thyme
optional olive oil

and that was the most authentic, but still not like mashed potato. It looked exactly right, but didn't taste like it. It tasted nice, as a food in its own right, but not like mashed potato.

Since then I've made the same recipe using different herbs - mint, chives, parsley, oregano....the thyme is the best, but it's not quite right. I'm still working on it and still trying to find the best recipe. For texture and appearance, the thyme one. I'm still working on it, to try get it to taste right.

Thank you for posting viable alternatives. If I had to admit to one weakness it would be to mashed potatoes. The cauliflower works wonders in the sushi rolls, but leaves a lot to be desired in the mashed potato category--my strong midwestern upbringing opinion. The mushroom gravy that is suggested to acccompany it is wonderful. Stretch of the imagination is needed to the potato part. I am very much open to potato replacements or the admission of no suitable replacement. Nirvana would be, of course, a suitable replacement. I would be willing to try recipes with the claim of such suitability. Let them roll!

Last time I made mash the only nuts I had in the house were brazil nuts, so I used them, and it made my favourite so far. I used fresh thyme, and no lemon juice. Just cauliflower, brazils, fresh thyme, olive oil and salt.
But I also had a new food processor which pureed it a lot more, so maybe that was the reason it was nicer.

Can you just chop up raw potatoes and season somehow? Or dehydrate them a little first to soften? Hmmmm... The rest of the year I couldn't care less about them, but at Thanksgiving, well, I want some. :)

does any body have a different version of raw mashed potatoes that does not use califlower, maybe someone used daikon radish. I do not like califlower but daikon sounds good.

I think the best herb to use is fresh thyme, but it still leaves much to be desired. I tried making the parsnip recipe and didn't like it at all - it was so sweet. I don't like sweet savoury foods.

Has anyone tried pureeing raw potato then putting it in a bag then dehydrating it???

I tried dehydrating the cauli-mash once and it changed it completely and was nothing like potato.

Well I tried pureeing potato and dehydrating it, and it did nothing to it.
I tried making doe's boiled potatoes but couldn't get them to stop tasting like raw potatoes. :(

I usually do half cauliflower and half parsnip. Recently though I made a parsnip soup (quite runny) which the next day firmed up in the fridge JUST LIKE mashed potatoes! YUMMY!

2 1/2 cups of cauliflower
1/2 cup olive oil
3/4 cup cashews
1/4 cup pine nuts
1 tsp sea salt
1 small clove garlic

Process until it has that smooth creamy texture. :) Top with black pepper.

I just bought the Vita MIx 5000 at Costco for $350.00. They are demonstrating it at my local Costo this week. I think it is normally 400$ plus. If you cannot afford that maybe you can get a used one at an affordable price. I was coveting one for so long I finally just broke the bank.

I wish I measured but this was my first try at 'mashed potatoes' so I just threw it all in my blender a little bit at a time. I used a little bit of everyone's ideas.

1 head of cauliflower
1 cup of pine nuts
water
olive oil
black pepper
sea salt
lemon juice
acv
a few other spices (i didn't have thyme straight but i had a mix that contained it! i can find the label to show you what mix it was eventually...)
3 small cloves of garlic (this is what made it so good!)

Next time I won't have to use oil so much or water, it's just that I did this all in a crappy blender.

So good. I ate it over greens and I'm full! I have so much leftover obviously

I had mashed potatoes in my Rawvolution "Box" last week. They were outstanding!!! I don't have Matt's book, but I assume there is a recipe for the same in the book. I just ordered the book last week because of how great the "Box" food tasted.

Maybe someone else has the book and could post the recipe?

Oh hippiechick... do tell about the box? How much food comes? I just checked out the site and I'm just drooling. It seems like a lot of money but if there is a lot of food then it'd be worth it. Is it enough to sustain you all week. How big are the portions? Drool is just dripping onto my keyboard!

Matt Rawvoltions mashed potatoes are the bizzaaaommmbbbb!

I have ordered different boxes like 3 or 4 times last year. Love his food. His mashed p's were sooo good an authentic. I need to get his book.

I tried Alissa's mashed p, and I threw it away. I wasn't a fan. It became runny, and wet, water formed at the bottom, I felt like I was eating porridge, I HATE PORRIDGE! I felt like using a whole head of cauli was 2 much. It just didn't turn out.

But I was just gonna post about Matt's mashed p's and I saw another poster mention it... Wahooo.. I second that. I need his book NOW! His pizza was great. His seed cheese was sooo good. His flat breads he uses for his sandwiches are sooo good.

I love "THE BOX"!!!

The Pizzas are awesome. I think the Big Matt with Cheeze is my fav. Don't even get me started about desserts!

The food will last about 4 days - well for me. I usually eat just fruit or juice for breakfast, then one of Matt's entrees or a side for lunch (this is usually my big meal), and another entree for dinner. The dessert is usually gone the day I get the box.

I can hardly wait since it arrives each Tuesday! Wait -- that's tomorrow!!!!

I hate cooking. We have catered lunches at work each Wed and Thurs so this really saves me from being tempted!
