View Full Version : herb "couscous" and spiced "cream of wheat"

Hey guys, I made the best raw foods tonight because my fast is over and I thought I'd share the recipes.

Raw herb "couscous"

-Equal parts soaked cashews and pumpkin seeds (other nuts and seeds would work as well, I'm sure)
-Enough minced garlic to add a punch of flavor
-Dried herbs like (basil, parsely, chives etc.)
-A little celtic sea salt to taste

put all ingredients in a food processor until it resembles the little granules like couscous and enjoy!

For dessert or another sweeter meal:

-Equal parts soaked cashews and pumpkin seeds (other nuts and seeds would work as well)
-A smaller amount of raisins or dates
-Agave nectar or honey
-a dash of cinnamon and allspice

Pulse all ingredients in food processor until it resembles cream of wheat or oatmeal type stuff. It can get too sweet very easily so be careful.

Yeah, I'm surprised at how much the herb "couscous" really does taste like real herb couscous. It was uncanny! The "cream of wheat" isn't as good (it's still awesome though) but that could be because I've always liked savory foods more than sweet ones. Oh and both are very filling.

Is real couscous raw? I was wondering this because it said it was raw but now that I see couscous substitutions like your recipes.. I wonder? :confused:
I have like 2 cups of couscous in my cupboard :eek:

No. "real" couscous is not raw. It's par-boiled pasta.
Here's a definition:
It is the separated grain of the wheat plant. When dried and milled, it becomes semolina flour, which is what pasta is made out of. However, as a grain, it makes a terrific rice substitute that has the advantage of being more flavorful (nutty with an interesting texture as long as it is not over cooked) as well as about five times quicker to make than rice.

I loved the stuff, just heat the water and pour it in turn the heat off and cover the pot and wait 5-10 min and load it with raw veggies, hum,hum:(
Old tastes are difficult to break sometimes but worth it:) .

I make RAWvolutions (Matt Amsden???think that's his name - book) couscous a lot, only I add kalamata olives. It is really, really good.

When you use:

Dried herbs like (basil, parsely, chives etc.)

Does that mean you purchased fresh and dehydrated or are these like schilling spices? Are dried spices purchased at the store raw?

I have a little bit of califlower left and i will make this for dinner tomorrow.
