Do I have to soak my almonds to make almond milk?
I'm making it with my SoyQuick maker.

Ahh....yep,
I'll soak em for 4 to 6 or over night sometimes. Idon't take off the reddish brown skins coz I'm to lazy to do it. I'll also throw in a banana to help the taste :D

Hi *Finding Me*,
I just looked in a cookbook I have entitled, "Raw Food/Real World" by Matthew Kenney & Sarma Melngailis and their almond milk recipe says to take the raw almonds, and soak them for 4 hours or more.
I hope that helps you! I'd love to hear what you think of the almond milk. I have yet to try making some. :)

Almond milk is lovely. But can anyone tell me how long it keeps in the frig after making it?

I've read mixed thoughts on how long it lasts. One book said 2-3 days, the other I have says 5 days. I've kept mine about 5-6 days and it still tastes fine. I have a fairly sensitive stomach and I haven't felt sick after drinking it yet ! I like brazil nut milk too.

Nancy, how many brazil nuts to make about 10 oz of milk? And does it have a strong taste?

YEP, soak almonds, do not soak brazil nuts, the nut milks taste great, I love brazil nut milk, it does not have a strong taste at all, a little earthy maybe, much more rich than almond milk, I think.
I only soak almonds and hazelnuts, and cashews, all other nuts I do not soak.
