ok so the other day my friends and i went to a restaurant and had some cooked lunch (i know i know but at least it was at a restaurant that uses only organic. i had a moment,lol) anywho they make their own ice creams and there was one that was really interesting so i tried it, Vanilla curry coconut...yeah, it sound weird but it was amazing. so i decided i wanted to challenge myself to convert it to raw.

i made it in a vitamix and it was not as thick as i would've liked it, more like a smoothie than ice cream (can somebody give me some suggestions on how to thicken up?) but it was absolutely delicious


i froze an ice tray with half almond milk half hazel nut milk
then put in the vitamix with

vanilla
dark agave nectar
about a teaspoon of curry ( i say that because i never measure, i just opened the curry jar and have it a shake)
shredded coconut

i turned on the vitamix and let it blend and mmmmmmmmm delicious.

Well, I am just intrigued enough to try this!

One suggestion for ending up with a frozen product rather than a shake or slushy:

If you have a Champion juicer, you can freeze the mix in a pan, cut the frozen mix into strips and feed it through the Champion with its blank plate in place.

After you blend it you might have to re-freeze it into cubes and then blend again after it gets really firm. When I was a kid I used to make a lemon sherbet without an ice cream maker. As I recall, I had to repeat this step 2 or 3 times and then once again before I served it. The freezing tends to make it compact down and the mixing incorporates air into it. I didn't use a Vita-Mix. Just an ordinary blender.

It was sherbet and not sorbet. I no longer have the recipe. It was not a raw recipe nor was it vegan. I recall that it used whole lemons, including the peel and some sort of dairy product. Can't remember what else was in it.
