when you cut these open theres the moist sticky vanilla goo in it...if the stalk is not fresh enough will the middle be dried up?

yes, the goo is the vanilla seeds, and that is what you use, you can actually use the entire stalk if you have a high powered blender to grind it up, or if you dry it and grind it up.


I take the pod and scrape out the seeds, then put the scraped pod in the freezer, and if I ever run out of vanilla beans, I will use the pods.

I've also used the pods to flavor drinks, by taking the scraped pod and placing it in a drink it looks so pretty and tastes so rich. add a cinnamon stick too, for a gorgeous and tasty eggnog treat.
