I'm looking for nut- free pie crust recipes. It seems like the crust the filling, and sometimes the topping are all nuts. Would you share some recipes if you do have them? please? Thank You, Joz

Hi Joz,

Yeah, I've made crusts by trying to mimic what I used to do when making pie crusts for cooked pies. They are usually flour, shortening and cold water.

I don't have exact measurements (sorry about that...I just don't do that most times) but sometimes I will use:

- MAYBE about a cup or perhaps half a cup of oat groats ground fine (you can sub with soaked, sprouted, dehydrated wheat berries or spelt berries or maybe even buckwheat groats)
- MAYBE about 1/4 c. of olive oil (mild, not that strong-tasting stuff...if you can think of a milder oil...maybe even coconut oil, that will work as well)
- And I add a dash of sea salt and just a squirt or two of agave (since in cooked pies, a basic crust is NOT sweetened for the most part)
- And I then process adding a tablespoon at a time of cold water until it forms a ball and is a "dough-like" consistency.

Knead a little, plop onto unbleached parchment, top with another sheet of parchment and roll out with a rolling pin. Now, I don't always do this, but I have done it a few times and it's great! You can probably just press into a pie plate too without the rolling, etc.

Hi Lunar*Fey,

No, it wouldn't "have" to be. I have done it that way just to make it more like an "authentic" pie crust (though it doesn't get all flaky like a cooked crust), but it surely doesn't have to be dehydrated...more a matter of personal preference. I'd just make sure that it's not too mushy/soggy if possible...perhaps by adding more of the "flour" if need be to firm it up a bit if I weren't going to dehydrate it.

But I like it because it's a nice, neutral, not-too-sweet crust that allows the flavors of the filling to be the main taste! :)

Once I order my carob powder and someone gives me a ride to the store, I am SO making that pie!!! yay I can't wait. :) lol

you can also make a crust out of coconut instead of nuts, works great.

what about soaked, pitted dates thrown into the food processor and then molded into a pie crust?

I agree with RP. Coconut works great. You could process about 2 cups of coconut with about 1 1/2 cups of dates.

RP & faith4u: coconut like dry ground up and dates thats it? Hm sounds good. but does it taste coconutty?
