I've been drying some macadamias now for about 2 days and they still aren't dried out and crunchy. Some are but alot aren't. I'm afraid that the ones that are will have bacteria growing in them that isn't good for me. What do you think? The ones that are still wet are now rubbery and brownish. Did I do something wrong when I soaked and dried them? I soaked them overnight and put them in the dehydrator...and they're stil there! Why did this happen? Is it because they are just old maybe? I dont' know how old they are. I would assume not too old because I baught them from the hfs in bulk about a month or so ago.

Well, macs go rancid quickly because of their high fat content, so they might've been too old. What temp did you dry them at?

yes, you don't soak mac nuts, if they are white, they are okay to eat, if they are even the slightest bit yellow, toss them, they are rancid, even thought they may not taste bad, they ARE rancid, and won't be good for you.
