I know it may sound silly or maybe obvious but I'm a newbie and I LOVE cheese. Is unpasturized cheese raw? I'd love to know! Thanks, Elisa :)

There are raw cheeses yet as this board is in support of raw vegan it is not up for discussion. Please read the Mission Statement on the home page.
Also, fyi, you might wish to read The China Study which discusses animal products.

Yes, there are some raw (unpasteurized) cheeses, but because this is a predominately raw vegan board, we don't advocate nor get into discussions about raw animal products :)
There are some raw boards out there, though, that do support eating raw cheese, meat, etc. If you'd like to do a search on such places, you can start with something like, "discussion boards for the paleo diet" or something like that.
ETA: Looks like Revvell and I were typing at the same time!

In Alissa's book, there is a recipe for Nacho Cheese, that fooled my SAD eatin' friend. It tasted great and she asked me twice if it had "dairy" in it! Needless to say, my first batch didn't last long at all....you can eat it straight out of the food processor,(like a dip) or dry it and eat it like a cracker. I munched most of mine cracker style....with guacamole....YUM! You won't miss cheese if you try this...I guarantee!!!

Yes, it's in the book....look for "nachos"...the "base" in the recipe is the cheese! To read the recipe, you think ???? HOW can that taste like cheese, but it DOES! It's my new favorite...dreaming of things to eat it with...stir-dry brocolli and cheese....nachos (of course)....veggie dip....my list is getting longer.

... can't get book yet (working on it; have a thread going re that which though OT, since it's the book itself for recipes, hope most people won't be mad I posted it in this forum! <sigh> <g>).
But I've been doing so well lately that I'm in a tizzy of impatience! <lol> My 16 year battle seems finally to have been licked (thanks to Tony Robbins!).
I've been doing very well in last few weeks and hope to continue doing so. Alissa's recipes have been getting such rave reviews for years now throughout various forums that I can hardly wait to try them all. But in the meantime, until the book issue is resolved, if someone wouldn't mind posting the recipe, I'd really appreciate it.
