Just made the alfredo from Alissa's book - it is wonderful! I was able to use my food processor for the first time! (I didn't use the Braggs Aminos, not sure about them - what is the purpose?) Anyway.... tasted it initially, and decided to modify(I love scallions and have extra basil I don't want to go bad) HOLY MOLY!!!! This is the first raw "meal" I have made, and I am in heaven! Is this the life or what?!? :) I didn't know what I was missing!

Sounds just yummy. I have been doing this diet for several years, and I have finally purchased Alissa's book. It is to arrive tomorrow. I can't wait. Everyone of her recipes that I have found online has been great. They appeal to raw foodists and cooked foodists alike!

If only I weren't working full time, these days I only have time to uncook on the weekends...most work days I just throw stuff together. I am hoping that her book will help me come up with recipes that I can prepare for my DH, who loves "meaty-cheesey-greasy" on occasion, something I have never been able to replicate on raw. Alfredo sounds just right!

I too made the alfredo sauce the same day I got the book. However, I had to add about 5x's the water it called for just so my processor could churn...was I supposed to soak the nuts first?
It was awesome and even my non-raw minded husband loved it.

I soaked the nuts all day, and also added probably 1/2 cup of water. I just kept adding water until it was smooth and creamy. It is really thick, and I think I could have added another 1/2 cup to make it thinner.

I also just bought Alissa's book and it arrived today! I will try the alfredo sauce as it sounds wonderful. What is everyone's favorite recipe from this book? It is so thick and daunting and I don't know where to begin.

Bragg's Aminos is a soy sauce that is raw and unfermented. I use it regularly and can buy it in my local supermarket [Stop & Shop] in Somerset, MA.

The Alfredo Sounds Wonderful!

In Alissa's DVD she demonstrates making the Alfredo. It is very thick and then she uses her hands to moosh (is that a word?) and squish it in her hands. The zucchini begins to let go of some of its water and the alfredo sauce thins down because of it. You have to knead it for quite awhile but it's fun having it squish between your fingers. I've never added tons of water and made is a creamy sauce but I'm sure that works too.
