I have a red and yellow bell pepper and won't get to use it in my salad before they are not good enough to use. They are getting a little wrinkly now, but I don't want to waste them, I wanna use them for something.
I am very low on nuts. I have about 1/2 C of sunflower seeds, 1/2 C almonds and 1/2 C raw spanish nuts. If I had the ingriedents I'd make the tomato soup.
I am horrible at improvising and making my own dishes.
Does ANYONE have any ideas of what I could make? A dip? A dressing?
Thanks!

Veeegeemom,
Well if you have some other standard veggies around you can make the chili and throw in the yellow pepper (it only calls for the red).
The chili was awesome, especially if you warm it up in the dehydrator for about an hour. Here's the link:

Hope that works for you.

What I normally do when I have bell peppers getting kinda wrinkly and don't want them to end up getting tossed is slice them and dehydrate them.
Then, if later on you come across a recipe that needs bell peppers blended in, soak them and use 'em (kinda as you would with dried tomatoes)!
Works like a charm! I've made some of Alissa's cheeses using dried bell (orange or red usually but yellow is fine too) peppers that were soaked to soften and reconstitute.

Cherie,
Thank you so much for that idea. I think I'll have to do that. I am so low on food and am just making it stretch out without making another run to the store.
Raw on a budget. It definitely is fun and interesting! :)
Thanks!
Pam
