I noticed this forum just now and I didn't post an intro sorry about that!!!
My name is Enith Hernandez born in Panama, married to Rob. (cuban-american) for 9 years, have 2 little ones one 90% raw and the other 70% raw. My soon to be 4 yo is taking the transition pretty good although she can't get away from the yummy cooked veggie soups mommy make, the baby (15 mo) she is not that intested in cooked foods but she really enjoy half an egg in the morning with a tiny piece of cheese the rest is raw!
I discovered raw a year ago, after doing Jenny Craig (which I hated so much - too many preservatives and too expensive!), I went to a raw buffet at a local farmer's market and fall in love with raw foods so I gave it a try! I only went 100% raw for 3 weeks but been at least 75% raw on and off since then. I stoped completely a month ago, but now I decided to go back to raw because first I started to put on weight and my skin started to look weird too :( I am so thankfull that I have never had any illness, have been active all my life, I only gained all this weight due to pregnancies but obviously I never knew how to take this weight off so I searched help! Now my husband and I are doing raw, at least 75% most days 85% raw and in the last couple of days I have lost 2 pounds!!!!
We only eat organic, I am an environmental activist, have a garden when I grow basil, peppers, tomatoes, arugula, garlic, onions and cilantro. Will soon expand my garden as soon as I get extra cash. I also run a run/walking club for mommies and my own website in Spanish about natural living. I work at home doing websites and graphics, also selling at ebay.
As soon as my husband starts working (he is graduating from school this semester) we will do the 30 day challenge. I am currently breastfeeding my 15 mo so I cannot do the MC, it is ok to start the challenge without doing the MC or fasting? I hope so!!!!
Anyways, my favorite gourmet raw dishes and the ones that I can prepare at home are:
Flax Seed Crackers
Nut Crust (our favorite yum!)
Salsa
Spinach Pesto
Spinach Dressing
Three Herb Pesto
Pizza
Nori Wraps
Chocolate Pudding
Mango Pie
Tacos
cashew pate
almond milk
and in the process to make and experiment with more dishes, I love cooking (that's why I guess I can't get away from cooking lol!!) and now I am in love with preparing all this yummy raw stuff!!!!!!!!!!!!!!!!!
I also wanted to mention that I have cured my daughter with raw foods, after an acute allergic reaction she got from antibiotics! After that, I started doing holistic/alternative medicine and curing any viral illness with raw foods and herbs. This include: colds, headaches, stomach aches (which we rarely get now since we started doing raw), bloading, allergies. I think I have turn into a pro, this self teaching and all these great experiences with raw foods have taught me a lot about living foods and what can it do to our bodies and to our life!
