I hesitate to ask because maybe it should be obvious, but when making the fettuccini alfredo, do you peel the skins of the squash and then make the strips? Or is the skin part of the noodles? Thanks

When we made this in the Level I class we did peel the zucchinis and yellow squash first then just used the peeler to make wide "fettuccini" noodles until you get to the seeds. When you make the "sauce" be sure to run the food processor until it balls up like dough. Have fun with your fingers working the sauce into the noodles until the sauce thins out. Enjoy!

I splurged and bought a spiralizer before I really got into raw and once I bought it I thought I might never use it. But I did for the first time the other night and it was so cool ! It make the zucchini come out in these really long curly angel hair sized pastas. It was so good ! I put some pignoli nuts, fresh basil, tomatoes, and a dash of olive oil and salt and pepper on it. Yum !
The spiralizer is only $25 and so worth it !
