I see a lot of recipes that call for avocados like in pudding. but they kinda creap me out. i just picture the avacado going brown. do you have to eat it right away?

Hey Ryana.....I'm pretty new to avos and I too was scared them turning brown or something. The lemon juice is what definetly keeps it from going brown. I've been consuming the lemon pudding almost immediately after I prepare it...so I don't know what happens if you keep it longer.
You know what I take that back.......the first day I prepared it I had some left over so I just left it in the blender cup, covered it with the lid and put in in the fridge...and GUESS WHAT???? When I returned home the day after...it was still beautifully "green" and good.

I made some chocolate pudding with avocados a few days ago and it still tastes fine. You probably don't want to keep avocado-based dishes for more than a week or so, though.
