I'm sure alot of you have had this very simple treat from Alissa's book...But I just had to share my excitement.
I've never been an Avo person until a couple of days ago. I had a nice ripe avo, one lemon, and 4 dates blended...a little water...and boy was I singing Halleluah!!! I was praisin' God on this one! :D It was soooooooooo smooth, creamy, thick and soooooooo good!
I didnt like the Fetuccine Alfredo...maybe I did something wrong :rolleyes: but it reminded me toooooo much of coleslaw, which I'm not a fan of.
I'm so excited about all the possibilities
It's gooooooood after it's been in the freezer, too.

Did you use a WHOLE lemon...peel and all? I've thought of making this...

Hey Wendi....I use the whole lemon except the outer "yellow layer"...I scraped that off with a julienne peeler

Rawpriestess.....I was very weiry of the Avo too. I've never been a fan of avos......
but I am soooo happy I tried the pudding...the color threw me off first and there wasn't really a strong pleasant smell to it either. So it's like you won't realize how good it is until u put it in your mouth..cuz everything else about it is misleading especially the green color. So I certainly have a new respect for avos now :D :p

Hey yall I dont have any date right now...do you think it would still taste good if I used agava to sweeten it??

I used a little agave and the dates, and it came out great. I'm sure it will work with just agave, although the dates do help thicken it. I use agave all the time as my principal sweetener for "chocolate" avo desserts.

I made this tonight but accidentally juiced the lemons instead of putting the whole lemon in. But, it still came out wonderful. I will put some in the freezer tomorrow afternoon just before my kids lay down for a nap and then I'll enjoy it after they are in bed! :)
Thanks for posting about this or I wouldn't have tried it either!

Same here. I tried the Chocolate Mousse and didn't care for it so I backed off most other recipes with avocado in it.

Thanks jjona, I think i'll try it with the agave tomorrow and then I'll put it in the freezer and see how it does. I'll report back and tell you how it turns out!

I have a friend that tried this and she tripled the recipe. She said it was awful and none of her family liked it. (family of 7)
So I haven't tried that one but there are so many others I love!!

Hey I tried it with limes lastnight and I didn't like it..too bitter. I tried my best to peel the skin off limes but it was tough since it's so thin. So I'll stick with lemons for now.

It probably would have made better sense to have made a much smaller batch for taste purposes before wasting all that good produce. Just a thought.
I say still give it a try ;) ..especially if you're the only one that will consume it.

I made this last night and left it in refridg this a.m. I tasted it it needed more lemon, so I added juice of 1/2 lemon then it was just a little too lemony so I added a big squirt of agave and IT'S DELICIOUS! advice, play with the recipe to get the taste you like.

i too made this...love, love, love anything with lemons. it was ok...the next morning it was way better than ok. thanks for helping me control the avocado's that were ganging up on me. :)

I just made this thanks to vegggeeemom's recomendations. Yes, it is absolutely wonderful. It is chilling in the fridge and will serve as a great desert tonight while my dh and ds eat sad. I know I won't be tempted now! :)

Alrighty yall, I got a blender for my birthday and I made this pudding. Instead of using dates (cause i didn't have any) I used agave and boi let me tell you I was soo happy with it! :) I'm gonna make some more today and then put it in the freezer this time and see how that goes!
