What to do with radishes????

One of my tenants gave me 6 pounds of radishes today ... they are beautiful, and I love radishes in salad ...but going through 6 pounds would be a LOT of salad.

Any suggestions as to other uses for radishes?

Maybe you could use radish slices for Alissa's raw ravioli? Probably would have to use two slices rather than folding a single turnip slice over, but I bet it would work well.

I cut radishes up thin and use them as chips with my quacomole.

Thanks for the ideas! Never thought of using them in dip.

I've used up heaps of them in salads -- they are a really good batch of radishes. I'm going to try and dehydrate a few and going to pickle a few slices as well.

You can make a lovely radish salad by slicing lots of them thinly, garnishing liberally with chopped parsley, drizzling with olive oil and lemon juice, and perhaps a bit of salt & pepper. Marinate for 10 minutes or so; delish!
