Hello.

Does anybody out there know of a recipie for raw candied pecans? And a good recipie for crystalized ginger, please? They had sort of a honey taste to them. Can't seem to find the recipie.

Here is a SAD recipe converted to raw:

SAD:

* 2 1/2 cups pecan halves
* 2 teaspoons vegetable oil
* 1 cup granulated sugar
* 1 teaspoon cinnamon
* 3/4 teaspoon salt
* 1/4 cup water
* 1 teaspoon vanilla extract

RAW:

2 1/2 c. pecan halves
2 tsp. mild olive oil or coconut oil
1/2 to 1 c. agave nectar or maybe date paste (dates blended with water to form a paste...no specifics...just add a little water at a time until it's a thick syrupy consistency)
1 tsp. cinnamon
3/4 tsp. salt
1 tsp. vanilla

Soak the pecans for an hour or two and then dehydrate overnight. Mix all the ingredients (except pecans) and then stir the pecans and coat well with the mixture.

Dehydrate on teflex or parchment, etc. until dry (not sure exactly how long...sorry)

Sorry, don't have anything for the crystalized ginger.

WOW!!!! I have been looking for this type of thing for forever... I just found this post! Thank you so much fo your genius in converting a SAD recipe into a RAW... Rawkinlocs... :D

bumping this because I was wanting candied pecans - why? Don't know. BUT in case any of YOU were thinking of them...

I tried making spiced/candied pecans with agave and it simply never dried, even after 5 days in the dehydrator it hadn't changed at all. Sadly, toxic maple syrup is the only thing I found that works for this (haven't tried date syrup but it should work).

Here's Ani Phyo's recipe:
1/4 cup maple syrup
1/4 t sea salt
1/4 t cayenne
1/4 t cardamom
pinch of nutmeg
1 cup pecan halves

Dehydrate until dry.

Trust me, you'll want to quadruple this recipe (when I quadruple it, which is always, I only double the maple syrup).

I'll have to try a raw version with date syrup soon.
