I love the red lentils sprouted. The orange are great, but hard to find because the ones in the store have the outer hull is removed mechanically ruining the seed. Lentils come in all sorts of colors, Red, Crimson, Orange, White, Black, French Blue and of course a couple of varieties of Green. My favorite is a mixture of all. To get good sprouting Lentils, especially orange, you should order them from a business that sells them for sprouts. That way they will sprout and not rot. You can also use them just soaked in recipes.
Hope this helps,

Just use them to "soak" for about 8 hours and then add to your recipe.
Good luck!
