I'm looking for some salad dressing recipes. I'm getting bored with my lemon juice, garlic, pepper, olive oil variation.

I use a combination of orange juice, seasoned rice vinegar, and teriaki sauce. Can use pineapple juice as well, or any fruit juices.
honey, mustard, and apricots blenderized, also makes a nice, tangy dresing
both of these are fat free.

I don't like most salad dressings because I find they make my greens rather soggy. But I do like to top my salad with pico de gallo. I will make this out of whatever I have onhand at the time such as tomato, onion, jalapeno, cilantro, tomatillo all chopped up, and sometimes even a bit of shredded cabbage I also add a bit of salt and lime juice. If let it sit for a little while, the tomatoes will give up some juice and it will take on the flavors of the others stuff in there. Yum! This is so good I can eat it on a bed of plain lettuce!

I agree, salsa is awesome on a salad.
Here is my salsa recipe: (i, too, use what's on hand, but here is a stab at a recipe. Also, this yields lots, so store in fride)
-5-6 ripe tomatoes (my tomatoes are small here)
-juice of 1-2 limes
-1 bunch of fresh cilantro, finely chopped (leaves and stems!)
- 1/2 - 1 onion, diced
- small red onion, diced
- 3-4 garlic cloves, finely chopped (i love garlic)
- sea salt (the salt is what makes the tomatoes juicier)
- a drop or two of olive oil
Add ins:
- cumcumbers
- corn (never tried raw corn, but i suppose it's worth a try)
ENJOY!

This is just the thread I needed. I'm starting a 30-day challenge tomorrow and the last time I tried it, I wasn't creative with salad dressings and I got so board.
