I've never bought nuts that weren't pre-packaged, and I'm getting ready to go the the grocery store tomorrow to stock up. I'm wondering how many lbs of almonds I can get by with (they're so darn expensive!!). I need about 2.5-3c. for the recipes I have planned to try (nut milk, a soup and a treat or 2).

Thanks!!

I "think" that a lb. of almonds usually comes out to about 2 c. (give or take a few) if I'm not mistaken.

But what I've done sometimes at the co-op here is taken my 2 1/2 c. measuring cup with me and I'll line the cup with the plastic bag and put the almonds in that to measure off ONLY what I need...once you remove the bag with almonds in it from the cup, that's it!

Thanks! That's a good idea to bring a measuring cup, I hadn't thought of that.

If you need to soak them--that can save you $$$$ to because soaking doubles the size. It is a trick I use  . BUT it may alter your recipe so I am not sure....

I know 8oz is a cup so 16oz is a lb. I usually go by that....

That's not quite accurate. 8 *fluid* ounces (measure of volume) makes a cup, wheras the ounces used for measuring solid goods are a measure of mass. Therefore the number of cups in a pound of some item depends on that item's density.
