Lots of coconut meat!!!

Any suggestions as to what I can do with all my frozen coconut meat? For that matter, any of the coconut meat? I love the water inside but don't eat much of the insides.

What to do with all of it?

dehydrate them and do coconut flakes? or put some almond or cashew milk with the coconut meat and make a nut smoothie? just ideas!!! :D

make chocolate pudding!! I have a GREAT recipe from Raw Food, Real World if you want it. I have also used coconut meat to make crepes for apple walnut crepes with maple cream, and for noodles in Pad Thai, and last night we had a pumpkin tart (pie) made with coconut meat, cashews, agave, date paste, spices, vanilla, soo good.
