I e-mailes the Just Tomatoes co. today to inquire about the temp that they dehydrate their fruits and veggies. I had a prompt reply that most of their food is freeze-dried, and if dehydrated they do not go over 90 degrees :D
I do have an oven that dehydrates, and an Excaliber on the way, but it's nice to be able to get all knids of crunchy, live fruit and veggies for a quick snack. My kids LOVE them. I'm afraid that my 11 month old is going to turn into a freeze-dried blueberry. I will probably do more of my own fruits and veggies with summer coming, but what a great option in the winter. We used the raspberries and blueberries as "croutons" on salads as well. Yummy!
