Can anyone please tell me what brand of raw miso I should buy.
I saw some at the HFS but could not tell if it was raw- they had barley miso too.

I saw some of the recipes call for it, but want o be sure I am buying/using the right thing.

My understanding is that while miso is not 'raw' (because it is made from cooked soybeans or cooked grains) it IS a 'living' food because of the fermentation process. As long as it is unpasteurized and found in the refrigerated section, it's 'live'. (Where I live the brand is Amano)

Miso is not raw, but it is considered a live food.

I don't eat it because it's not raw...but lots of people think it's a miracle food..
I can't understand why...wouldn't fermented veg/nuts/seeds, be just as good?

miso is not raw, but it is a living food, I use chickpea miso, if a recipe I am making calls for miso, it is very mild.
