This is my own version of Blessing's Lemon Swirls. They are chewy and creamy and are bursting with lemon. They're the best dehydrated cookie I've ever made!

Lemon Chews

2 cups soaked cashews
zest from 2-3 lemons
juice from 3-5 lemons (amended - add more for smoother consistancy)
1/2 cup of agave nectar or honey (or to taste)
2 cups dried coconut

Process nuts until creamy, then add remaining ingredients & process to cream. Taste it to make sure it is sweet enough, but it should be nice and tangy from all the lemon zest & juice.

Drop into thin wafers or pipe through decorating bag (or zipbag with corner snipped off) on to dehydrating sheets. You can make initials, shapes, etc.

Dehydrate for quite a while until the outsides are fairly hard, but they should still be chewy. I had to dehydrate mine 18-24 hours, and transfer them to mesh sheets once they solidified.

I've got these in the dehydrator now. They are really good. I love the flavor; it's different than the things I usually make, which is a good thing, since it gives me more variety.

Just an FYI, I made them tonight myself, and they needed more lemon juice. I used something like zest from 3 lemons and juice from 5 lemons and they were nice and lemony. You know, when you are working with raw food, the measurements are always different. So if you are using teeny lemons, you may need to use more. I should have measured out in cups, but oh well!

I ADORE, LOVE, ADORE those lemon swirls...I tried making them once but they came out too dry, I will definitely try these!

My cashews were pretty wet from soaking. I also used half macadamias this time but it won't make a difference which nuts you use as long as they're the creamy ones.

Wow these are great! I have never been a fan of "our" nuttyfruity cookies so these hit THE spot. I used a piping bag to make my shapes. I had trouble keeping the kids out of the batter which I have to admit I will be serving in a bowl next time with a BIG spoon, Oh Yah!

You can make them into any shape too!

PS; I also ate the ball shaped one before dehydtrating and it was just like a lemon truffle so would make a nice addition to a candy recpie collection - holidays perhaps?

I just tried one of the Blessings Lemon Swirl cookies and I HAD to make them on my own! When I did a search for Lemon Cookies I didn't expect to find one that was a recreation of the Blessings cookie!
I am going to get my cashews soaked and make these up right away!

Thanks again guys!

I used to get real fussy and make initials for all the kids, etc. Now I just make rings with a cookie press. I find that they dry out quicker that way.

They are so thick, I can just press them right out on to the mesh sheets, so I don't bother with the solid sheets or turning them over.

An hour or so in tepid water should do the trick. Actually they don't "have" to be soaked if you don't want to, just make sure puree them well in the food processor and add plenty of lemon juice to get the consistency creamy.

Okay... So I did a little oospie with the coconut and put in about a half a cup too much. So the "dough" was probably stiffer than it should have been. I also could have used more lemon, I think. I had 5 of them. 3 were large but mostly peel and the other two were tiny. At any rate the mix tastes really yummy and I think this would still be good even if you didn't have a dehydrator. Just add in a bit more coconut so it holds together. I wound up forming rings by hand. I do have a cookie press somewhere but I haven't used it in years. Not even sure where it is. I tried snipping the corner off a plastic bag but apparently I snipped too much. So, mine are kind of funky looking but I'm sure they will taste just fine!

Whenever I plan on dehydrating anything and the dough is too thick to handle, I just add water. It requires a little more dehydrating time, but keeps the flavor intact. The lemon juice would have been fine too.

Glad they turned out good. They are one of the kids' favorites!

I have a batch dehydrating right now! The "batter" was so good! And how fun at 9:30 a night to be licking a cookie batter - WITH NO GUILT!!!
I am making these to take up to my Mom's tomorrow. She fell while walking her little mini Dachshund - Gretchen this morning and ended up kissing the concrete! Bless her heart! She's 82 and walks mornings and evenings. Thank the good Lord she didn't break anything! A nurse came and checked her out. Mom says she has two black eyes and a black chin, but it could have been much worse.
Mom is my "tryer-outer". I make my raw recipes and take them up to her. She has loved everything I've brought up so far.
Anyway - my batch is making my house smell wonderful. Even MY two mini Dachshunds liked the batter!

Yes! I took them out of the Dehydrator this morning on my way to the gym and I just had one with lunch and they are soooo good. I made so much that I am freezing a bag full. I WILL NOT be spending $6+ on the Blessings version any more! I think these taste even better! :)

I just got back from taking my Mom a plateful of these and she loved them! As do I. I could have let them go in the dehydrator a little longer, but I wanted to get up and see my Mom.
These are SOOOOOO good! I love lemon!
