How much nutrients, enzymes or anything else good is lost by my toasting my almonds?

I would think that toasted or roasted almonds are devoid of all nutrients, as they are heated above 115 degrees for a long time, plus it's way over 115 degrees.

Ummm, you want to know EXACTLY? Are they organic? Where'd you get them from? Why do you want to toast or roast them and lose ANY nutrients at all? And since this board is in support of the raw food lifestyle.... :cool:
Suggestion: soak and almost dry them then add some wonderful spices ~ curry or something, then continue to dry in the dehydrator.

I realize that this board is in support of the raw lifestyle - that is why I am seeking answers here. The only thing cooked at all that I eat is a toasted almond. Everything else is totally raw. I love almonds - I buy them raw but I'm so used to the toasted flavor that I keep toasting them. Thank you for advice on the spices.
