I dehyrdated bananas and apples for nearly 24 hrs and theyre still going...theyre chewy and bendable not crunchy like the dehydrated bananas at the HFS? what am i doing wrong? Does this mean if i go to make flax crackers or something they wont be crunchy to?

My dehydrated fruits have not been crunchy. My crackers surely are.

Are you sure they are dehydrated? They might be freeze dried. I think that is what they do with those fruits and vegetables called, "Just Corn" or "Just Strawberries." Don't quote me on it because I am no expert, but that is what I think you are getting since they are crunchy.

How thin do you slice your banana's? iIf I do mine thick like 1/4 to 3/8' inchh thick it takes for ever for them to get crisp. But if I slice them like 1/8 to 1/4 area they dry quicker,( coz they're thinner), and turn crisp.

I dehydrate fruit to crisp, but you do have to slice them thin.

Many types of dried fruit are fine when bendable... and once cooled most will go crisp. Try taking one out and leaving it until cool. You'll probably find it's crisp! Unless of course they are very thick and still moist inside.
Do let us know!
