I have an intolerance to flax. I've been told that you can substitute chia seeds but I am having a hard time finding them. I could order them online but the shipping is the almost as much as the seeds. I am specifically looking for pizza and cracker recipes. I have made the few without flax in Alissa's book, but they all involve days of sprouting or a ton of ingredients. Does anyone have any suggestions?

how about just a collard leaf as a pizza base, or Paul Nison uses a portobello cap as a pizza base, would that work for you?
no flax, no sprouting, no dehydrating for days on end.

How about using buckwheat sprouts? They make a great base for pizza or crackers. For crackers, I process them with carrot/celery pulp from juicing if I have any. If I don't I just throw in some carrot and celery. I add lemon, Bragg's/salt (whichever you prefer to use), seasonings like cumin and chili powder. I add enough water to get the right consistency. They are fantastic.
