Does anyone dehydrate tomatoes and use them in place of sundried tomatoes?

I had a bag of tomatoes that were getting a little too soft for me (I like them firm) so I dehydrated then and vacuum sealed them, I plan to do just that. They came out beautifully!

Thanks Smasty,

I looked it up last night and found the answer. This is going to save me tons of money. I have some dehydrating now, they aren't roma which is what is recommended, but I'm doing it just to see.

I had been wondering the same thing. Thanks guys! This will be great when the tomatoes are abundant in the summer.

Another good thing about doing this ourselves is we control the drying temp...I'm sure most sundried tomatoes have been dried at very high temps...even if it is by the sun.

Remember to do fairly thick slices since they have so much water.

I dry my own tomatoes, and they are MUCH better than store-bought ones. I love to just snack on the ones I dehydrate.

How do you dehydrate them? Like what kind of tomatoes do you use, how thick do you slice them, what temp and about how long? I am especially curious about Allison's as she eats them right away (without soaking).

Thanks!

This is great- I always grow tomatos too ad they have so many, that some go bad... this will be great 'spoil' control!

Thanks guys- do you season them before you dehydrate?
