Finally made cheesecake !

Well, I got over my cheescake phobia this morning and made the most awesome cheesecake! I am so excited that I pulled this off !
No way can you tell it's raw!
I just took it out of the fridge and it cut so nicley and then I ran some out to my totally SAD eating neighbor and fed her some in her driveway and she wants the recipe !! now i'm going across the street to retrieve my son and i'm bringing some for that neighbor too!

The Just like Cheescake recipe I got from here except I used 1/2 the lemon. I do not like lemon tasting cheesecake and this came out perfect!

Funny, I have made this several times but no one ever thinks it tastes like cheesecake. People have suggested I call it lemon coconut pie. If I cut down on the lemon, it will turn into coconut pie. Wonder why.

I can't wait to try the cheesecake. Maybe I'll try to make it into a chocolate cheesecake~either with carob or with cacao powder~My choice! And of course instead of using cashews, I'll use all macadamia nuts. I know how you love macadamia nuts Mara. LOL :) I'll let you know how it turns out.

I love how you share your desserts with your neighbors. It is really special when they ask for the recipes. Keep on planting those seeds!

Thanks Chrissy ! No Macs :p for me but it would probably be yummy with them ! My sister came over this morning and she tried it....she was not thrilled with it but ate it because it had no sugar in it.
