does anyone have a Dendelion Salad Recipe? has anyone made it? I'v used it in my Green Smoothies, but for some reason salad sounds so tempting. Joz

this is what i do:
chop the dandelion greens finely. add a little celtic or himalayan salt and massage briefly. then add plenty of minced red onion, lemon juice and extra virgin olive oil. sometimes i add some sumac powder as a lebanese friend taught me.
if you prefer a creamier salad, sub tahini, thinned a little if necessary, for some or all of the olive oil.

btw, if your greens are very bitter then let the salad marinate til the next day and it'll start to mellow.

I hate to waste any part of the plant and they would look so pretty in the salad.

There is a recipe in Eating Without Heating -- by Sergei and Valya Boutenko that is very simple.

2 bunches dandelions
1 large avocado
1/4 cup lemon juice
1/2 tsp salt (optional)
chop the dandelions and avocado into a bowl. Mix in the rest of the ingredients.

Very simple. I would suggest adding this book to your collection ... it has a lot of simple, wonderful recipes.

I like it best with a garlic tahini dressing - for people that don't love the bitterness of the green that works really well!
