Does anyone have any good recipes for corn enchiladas, tamales or tortillas and/or mole sauces? I ate at Roxanne's a couple of years ago before it went out of business, and my favorite dish I ever had there was one with corn tamales with a black mole sauce and what tasted like refried beans inside. There was a cashew sour cream and cilantro on top for garnish. The corn "tortilla" on the outside was soft and chewy and delicious.

My own corn tortilla recipe: Blend a package of frozen organic corn until smooth in the food processor.
Make "tortillas" on your teflex sheets.
Dehydrate until flexible.

Can you find frozen corn that hasn't been blanched before freezing? After all the posts on this, I'm now paranoid about buying frozen veggies and am only buying frozen fruits. Thanks!

RowanC, thanks for the tips. I searched some of the earlier posts and will try buying some corn at the store and freezing it and then trying your recipe, which sounds great!

That sounds amazing! I ordered Alissa's cookbook, but it hasn't come yet. I can't wait until it does. I keep reading about her recipes on these boards.
