The salad was very easy to make, and very tasty. It was served on small lettuce leaves to roll up and eat as an appetizer to accompany the Minty unDevilled unEggs posted in another recipe:

Shiva's Minty Peas N' Carrots Salad
2 cups green peas
2 cups shredded carrots
leaves from a bunch of fresh mint, finely chopped

Toss in a bowl to mix, then add and toss again:

1/4 cup minty vinegar (bruised mint stems steeped in vinegar)
1/4 cup olive oil
salt to taste
ground black pepper to taste.

Serve as a side salad, or in lettuce rolls as an appetizer

MMMMMmmmmm this does sound tasty. I like the undeviled eggs recipe too! :)
