what to do with horseradish

ok, i have a ton of fresh horseradish left over from my passover seders, some already grated and some of the whole root. i love it, but need some ideas for recipes using it.
can i freeze it whole -- what will happen to the taste and/or texture when defrosted? if it can be frozen, should i grate it first and mix in a splash of apple cider vinegar, then freeze in an ice cube tray? if it cannot freeze well, how long will it keep in the fridge?
