This is an amazing recipe I made myself for dessert tonight. It's altered from a recipe in Vegan World Fusion, an amazing cookbook that everyone should own!
Banana Nut Pudding
Serves 2
2 ripe bananas
1 cup raw almonds, soaked
1 tbsp. almond (or peanut) butter
1/2 cup dates (about 4), pitted
1 tsp. cinnamon
dash cardamom
dash nutmeg
1/3-2/3 cup water (to desired consistency)
Blend all ingredients in a food processor until smooth. This will take a while, continue adding water slowly until either "pudding" or "smoothie" texture. Top with a handful of coconut and a dash of nutmeg. Feel beautiful!
