View Full Version : Taste Balancing - Sweet, Fat, Salty, Acid

I've read lots about taking this into account for recipes. Piers says if you can hit each one just a little it stimulates the taste buds more and comes across a tastier food.

Here's what I have so far:


Fat



Cold pressed oils
Nuts
Seeds
Olives
Avocado
Coconut

Salty
Sea salt
Olives
Sea veggies
Nama Shoyu
Olives (and olive water)
Celery



Acid


Lemon
Lime
Grapefruit
Orange (milder)



Sweet
Fruit
Dried fruit
Carrots
Capsicum/Bell Pepper
Beet root
Coconut Water
Tomatoes

Does anyone have some more information on using tables like this, or where they come from? I can't find them on the internet (keep coming up with site about using soy sauce to help market your bacon - really).

Victoria Boutenko talks about this but a little differently

Sweet
Salty
Spicy
Sour
Bitter

she addresses this in her books, she says you need to taste for each thing in all recipes, or the recipes will taste a little flat, this is why her foods have that gourmet taste, hit all of these tastes, and voila' gourmet.

RP.. That's right! She does mention that in her new book doesn't she.. Gonna go back and reread that...

Is that why Alissa's plan works so well?

Victoria Boutenko uses these breakdowns, and I think this is the more traditional approach.
