View Full Version : Orange Goji Berry White Chocolate

Okay here we go.... I have to say again.. this is AMAZING!!! Just amazing. The best raw dessert ever!! Better than chocolate carmel divine and easier too!
Grind up:
1/2 cup goji berries (usually sticky, not really a powder)
Blend until smooth:
1/2 cup melted cacao butter
1/2 cup raw cashews
1/2 cup agave nectar
Blend in Goji powder
Then by hand mix in whole:
1/2 cup cacao nibs (optional)
1/2 cup whole goji berries
The zest from 1 orange finely zested
Spread in a glass pie plate (think chocolate almond bark).
Chill in the freezer until firm.
WOW! WOW! WOW!!
It's this brillant red/orange colour, with the crunch of dried goji berries and cacao nibs. A sweet dessert, and also HUGE in antioxidents too!
WOW! WOW! WOW!!
It actually reminds me strongly of orange cranberry desserts that are quite common in Canada. YUMMY!!!
The best thing about raw chocolate... you have like 20 g and you're satisfied. We've only eaten the smallest chunk out of this fudge. Show me that happening with a regular family, and a standard chocolate bar! Never!!

This sounds GREAT!!! got it in my files for later to make...
About the pics... I have a program that came with my camera... but I also have webshots.. www.webshots.com When I plug in my camera to my usb port.. the webshots pulls up the pics.. then I just can coppy all pics to my pc .. Whalla! but have to delete them off camera by hand. might work for you.. What type of camera do you have.. mine is an olympas.

I made it today and it's in the freezer. So far WOW is right.
Question; do you have to add the zested orange? Will it change the flavor?

OHMYFREAKINGOD!!!!!!!!!!!!!! THIS IS UNBELIEVABLE!!!!! HOLY WOW!!!!
I just blended the agave, gogi, cacao butter & cashews in my blender.. ok so I'm lazy.. anyway OMG this is the best thing i've ever tasted in my entire life!!! This tastes like easter candy!!! It feels like a holiday in my kitchen!! And it is gorgeous too!! I can't bring myself to rinse out the blender so i'm going to make a small batch of almond milk with the stuff that's left in it! LOL

I just gave some to my 3 year old who tasted it & said "yat not good a mine body! Yat make mine body hurt" Apparently she thought it was actual real junk food!! I had to convince her it was raw & explain what was in it before she would take another bite!! It does taste just like candy! :D

Strawberry Tibetan Goji Berry Smoothie
from Raw In Ten Minutes by Bryan Au
1-2 serving
1 fresh young coconut (meat & water)
1 cup strawberries chopped into small pieces
2 tbs. Agave
1/4 cup soaked Goji Berries
How to: Carefully scrape the coconut flesh and pour the coconut water into a bowl and take out all the splinters and fibers then pour into a Blend-Tec Blender, then add all the rest of the ingredients and blend to desired consistency. If you do not have access to fresh young coconuts then you may also use almond milk instead. The Goji berries give this smoothie such a vibrant unique energetic flavor that will delight you while giving you amazing super vitality.
I know that the more people discover and try Tibetan Goji Berries, the more blissed out they will become!

I don't soak the cashews first with my Vitamix. It blends things up really well. I think soaking them might water it down too much. You can freeze the cashews first and grind them first for a finer texture.
Really the soak or not to soak is a personal thing. Cashews don't have levels of enzyme inhibitors like almonds do, however they are probably more digestible soaked.
Goji berries are still a fairly specialty item, however many health food stores are starting to carry them. They are a dried berry that looks like a hard red raisin, and quite common in China. When I visited Hong Kong they were in all the dried fruit and nut mixes.
For me the orange zest is essential (if organic). It really adds a nice edge to them. They are still delicious without.

I just made another batch & used tangerine zest because it was oranger than my oranges! LOL
I imagine you can use most any dried fruit if you can't find gojis! But man is it perfect with gojis!

I FINALLY got the chance to make it yesterday as before, I didn't have many of the ingredients...now I have them all :D
This stuff is GREAT! The only thing I didn't have was the cacao nibs, but I mixed in the goji berries and some chopped cashews to the mixture and it's very nice. It reminds me of this orange chocolate bar I had once a while back...only thing is, I don't think I measured out the cacao butter right because although I froze it, it didn't get firmly hard...just sorta like a fudge consistency...but still delicious. Last night my kids had chocolate chip cookies (the SAD kind) and because of eating this orange-white chocolate, I wasn't tempted ONE BIT with their cookies!

You can use coconut oil instead, its good. It will just be a little more melty and won't quite have the same white chocolate flavour.
Tangerine would be great - I'll try that next time.

Question: Do you soak the gogi berries? The ones at whole foods are hard........... I can't wait to try the recipe. I have to say, I didn't like gogi berries when I first tried them (they were in a bar made fresh from a raw cafe). But then as I have been mainly eating raw for the last couple of months, I have come to really like them! Go figure. :p

I use the dry.. they do absorb some moisture from the other ingredients though. It's best to be dry especially for the ones you grind... you want more of a powder from them. I suppose if you wanted you could soak them with the agave and then blend.

Thanks. I was wondering if it needed to be softer for the grinding process but you think not, so I will try it that way!!

Okay, I am sitting here copying down the recipe and I got to thinking: How do you melt coconut butter???
I have coconut butter I bought- it's hard and in a huge circle form. Advise?

Some say you can put hot water in a bowl and then put the cacao in another bowl and sit inside the bowl with the water to melt it.
But what I did was just cut/broke off some, put in a small, shallow container I have and put in my dehydrator. It took maybe about 15-30 minutes or so (I didn't really time it) before it was melted. This may be more of a challenge if one has a round dehydrator as opposed to an Excalibur where the trays can be removed...but I suppose to avoid spillage, one could put the cacao butter in a sealed ziploc bag and place into the round dehydrator.

If you still have your stove, you can also try turning the oven on and placing a bowl on top of the stove in the center (not on the burner) and let the heat from the oven warm it to melt it...or maybe even put in a pot and warm on the burner on a very low heat just until your finger can rest in it.

This is so cool! We have been drinking gogi juice for its amazing health benefits, its really incredible! Ive always wondered if you could find the berry itself, the recipe sounds delish!

Just tried this over the weekend, and it was superb! SOOOOO GOOOOOD! I wasn't sure, even while I was making it it, that I would want the cocoa nibs & extra goji berries thrown in, but they make it work! WOW! Thanks to whomever came up with this one! BTW, I used coconut oil/butter, & it worked fine! THANKS, THANKS, THANKS!
I really need to get my hands on some goji berries. Thanks for letting me know I can use coconut oil instead of cacao butter... I can get goji at my health food store but not the cacao butter. I can't wait to try this.

Thanks Sheryl for this recipe. My SAD friend tried it and she couldn't believe how good it was. She said that SAD sweets can't compare. She's also not crazy about sweets in general but just loved this.

Hey Michelle allene, goji berries, are berries that are cultivated in Mongolia-Tibet. Preferrably, the authetic ones --these little red guys are packed with 600 times ore vitamin C than OJ and has varying amounts of amino acid,vitc a,c and I belive it's e. In eastern culture it is a powerful blood purifier and aids the spleen. They come dehydrated ....can't juice then but you can soak them in water for a few hours and drink the juice.

I've been meaning to try this for ages!!! I finally made it this morning...it is setting up in the freezer right now. The unfrozen mixture is just awesome...what a great combination of flavors!! I am not normally crazy about either cacao nibs or goji berries but in this they are fantastic!! I made a nut mylk smoothie in the vitamix after they were done so I wouldn't waste even a smidgen if it!!!:D Thanks for this one~

You can buy goji berries in uk -from large tesco's -tibetian authentic in brown paper bag , very good.

I think that the next time I make this though, I will make it into cookie-sizes pieces. (easier than scraping it out of the glass dish with a knife, and trying to break it into smaller pieces)
