I soaked some raw almonds today and after 3 hours I went to change the water and it was fizzy with some foamy stuff top, very odd...I have never seen this. Grossed out I threw them out. It that a sign of being rancid maybe ? I ate a few pre soak and they seemed fine..oh quite a few were chipped and broken too.

Foamy and fizzy is usually a sign of fermentation. Perhaps they were too warm? That could do it. Unless I need them real fast I sprout almonds in the refridgerator to eliminate fermentation.

My water was cold, and my kitchen is 68 so no to the warm. Thats why it is odd, nuts should not ferment in three hours, IMO.

Hi, I've had almonds do this often, but only usually after they've been on my counter a couple of days, I change the soak water often.

So, maybe your nuts were older, but the foam isn't a problem, just rinse rinse rinse and taste one of the nuts, if it tastes okay, then use them, if not then toss them, I've only had to toss almonds once, -- LOL I learn fast!!

mostly it's all in the rinse,

rinse rinse rinse, then soak, then rinse rinse rinse again after about 4 hours, then continue, you can do this up to about 3 days, but usually after 24 hours, I put them (water and all) into the fridge, they will last there about a week,if you rinse rinse rinse at least once or twice a day.

I know you said you already tossed them, but for the next time, you could probably use them.
