I made maraw's lemon chewies last night, and they were ready this morning. I used cookie cutters to make bunny shapes and 1 heart shape (for hubby :)).
I just wanted to tell everyone that IF they haven't tried these and IF they like lemons and coconut, then they must try them. Today.
I did a variation though.. the recipe calls for 2 cups of Cashews, however I did not have enough. I only had 1 cup of cashews. Thus, I used 1 cup of cashews and 1 cup of almonds.
This turned out quite pleasantly. It had a light almondy taste which we found to be very invigorating.
We love them! So good! Lemon and coconuty-goodness.
Try them and you will not regret it.
