I made Alissa's meatloaf recipe last night and this morning.
BLECH!
It's horrid!
It's like a big ole dried out hamburger and the taste is yuck.
Has anyone else had luck with this recipe? Any ideas about which sauces are best to top it with? Otherwise, it's going into the garbage. I just can NOT eat this! :eek:

I personally like the recipe, but I didn't make it as a "meatloaf", but rather followed Rawpriestess' suggestion of making them into burger patties.
I served mine with Alissa's Barbeque sauce recipe (which to me is more like catsup) and I really enjoyed it!
Did you taste the mixture first before you dehydrated it to see if maybe you'd like it better by adding a little of this or a little of that? Sometimes you have to make it more in tune with your tastebuds i.e. if you like it spicy, add more spicier seasonings, if you like it saltier, add more salt, if you recall cooked meatloaf (at least the ones my mom and grandma made) there were chopped onions and bell peppers in the loaf, so maybe even try doing that, etc. Sometimes you can make a recipe exactly as/is and it's a hit with you...other times you gotta tweak it to your own tastes as with any recipe cooked or uncooked!
I can't remember if I did anything too much more differently or not, but I do remember that when I made it, I liked it and so did my husband.
I also recall reading here that Revvell likes it but she just eats it as a pate' wrapped in something rather than dehydrating it.

mine didn't taste that good after being dehydrated :(
I made about 3 burgers and one loaf, The burgers were fine, not the loaf

Well, maybe I overdried it. But I don't think so. And I don't think I'll try it again. I just love most of the recipes in that book.. but this one gets a big ole black X through it!

I've eaten it without too many spices and just stuffed it in a fresh tomatoe undehydrated and topped it with bbq sauce and it was GOOD!! So maybe try it undehydrated?

Oh MAAAnnnn, this is one of my FAVORITE RECIPES in her book.
I make it with double the spices, and I make it into burgers, and I dehydrate, now I LOVE it without dehydration, and I love it with dehydration, had two tonight, yummmmmyyyy, they taste so good,
now I make them usually not alone, I make them into burgers, by putting them on top of the onion bread, and adding, honey mustard, white onion, lettuce, and tomato and some pickle, mmmmmmmmm
or I top a pizza wrap with one crumbled, and add some lettuce and chopped tomato chopped white onion, and salsa, with cashew sour cream, I also add taco spices, like cumin chili on top of the burger crumbles, this is an excellent tostado.
I crumble it and put it in side the enchilada wraps, with cumin and chili powder and some lettuce and onion and salsa, and it is an enchilada/burrito thingy,
I also use it to stuff mushrooms and tomatoes before dehydrating, it is excellent.
anyway, I use it like veggie/meat-patty all the time, mmmmmmmmmmmmm
but that is just me.

I'm glad to see all the input, as I was sprouting my barley & getting ready to try this recipe. It sounds good & I will not back off from the challenge. :D
RawPriestess, once again-thanks for all the good ideas for this dish. I was thinking along the same lines-that this could be made-frozen as a staple & used in a variety of ways. :cool:

I find with some loaves they ferment and taste yuck if too thick... maybe it fermented??

you're welcome all, and I find it kind of has a very neutral taste before it is dehydrated, after wards, it is more burger-ish, so you can judge that by what you want it to taste like.
and I've made it at times and it isn't as good, or sometimes it's better, makes me think that since the spices and such are the same, that maybe my red peppers or celery is a little different, also, some almonds are sweeter than others, so there are lots of variables.
maybe make a smaller batch, say 1/2 it, and try that with different spices and such, until you get one that really resonates with you.

For my birthday last year my mom made this for me...she was using a toaster oven to dehydrate (was quite funny...she had the door open and sat there for like 20 minutes with her hand directly on the coils to make sure it didn't get too hot!) anyways...the temp wasn't nearly what it needed to be so it didn't really dehydrate too much...she also made mushroom gravy (also from Alissa's book) and that's what we put on it...try it again...maybe try half the recipe (so you don't waste too much if you don't like it) under dehydrate it and try different sauces...I love this recipe!

Ok.. I broke this into burger size and dehydrated it a bit more.
Then,
I made Alissa's barbecue sauce, but I added some Bragg's Aminos and some garlic and it tastes just LIKE barbecue sauce.
Then, I put the burger on a lettuce leaf.
I slathered it with barbecue sauce.
I put on a slice of tomatoe and a slice of red onion.
Topped it with another lettuce leaf.
YUM!
It tastes just like a barbecue burger!
Ok... sometimes you just need alittle help from your friends!

I'm sooooo glad you like it, YES, this is how it should be eaten.
with lots of dripping sauces,and crispy lettuce, and succulent tomatoes, and cunchy onion, mmmmmmmm

You have inspired me to try this recipe. Can you help with a little confusion that I have. In Alissa's book it says that the barley to be sprouted is 'hulled'; does that mean with the hull or without the hull?

Phoenix - hulled barley has the outer husk removed, but has the bran left on. It's got more of the barley left than pearled barley has. Although others have said pearl barley works in a pinch. It likely won't sprout though as too much of the barley kernal is removed.

I just have to let you all know that my meatloaf came out just FAB !!! Loved it. Now I did use RP's suggestion & did "burger" sizes-so I could freeze...& I used cilantro instead of parsley. I made open faced meatloaf sandwiches & a "taco" pizza with the "meatloaf" crumbled on top. What a GREAT recipe. Thanks everyone for all the great ideas..

I think I would love to watch you cook learn from you....I have seen in many of your post some of the ingenius ways you make things..better or different and they all sound wonderful. Your creative mind is wonderful! Between you and Dragggon I would learn so much.. wish you were closer..

I was holding onto the edge of my chair waiting to see what would happen. I could feel everyone pulling for Alissa's recipe.
Haven't tried it myself yet but I will and I will make the patties.

You know what is sooooo great about the meatloaf is the versatility of the meatloaf. You can make them into burger shapes & then freeze & use for everything from burgers, "sloppy joes, taco pizza, taco salads, meatloaf, etc. etc. etc. What a GREAT food to have ready for those nights when you just NEED a meal & don't feel like fixing something. I highly suggest this recipe.
I can see it now...Raw food "burger joints" springing up all over ...drive-in...do you want guac on that??? :D
