This Sunday is Easter and I am having some family come in for the occasion. Everyone is bringing something and of course, I will be keeping my end raw. Anyone have any great recipes that would work well with Easter? I'm working on some today and will share if I come up with anything.

OK, here's a challenge. I have two young Thai coconuts. I want to do something like colored eggs - something sweet for the kids. I'm thinking puree the meat, add some vanilla and maybe some soaked cashews, a little ginger and agave and roll in coconut flakes. I could make them different colors using carrot juice, beet juice and spinach juice. I wouldn't need much to make a pastel. What do you think?
Thats going to be one of my challenges for the day - any ideas?

Maraw,
I'm making Alissa's carrot cake, shaping it into a bunny, and putting coconut over the icing. I'll add carrot sticks for whiskers as someone suggested and some other veggies/fruit for the eyes, ears, and nose.
I'm also making macaroons and shaping them into nests and making carob eggs with cashew cream centers. Can you tell I have a sweet tooth? Lol.

Maraw, sounds like you have that one perfect.
If you are talking about kids, I know that kids like to make their own things, so maybe have some thai coconut meat shredded and died different colors, and then let them put them on some dehydrated cookies with some cashew frosting,
they could decorate their own cookies with the shredded coconut flakes any way they choose,
I like the coconut as nests, that sounds good
also you could make date and walnut truffles, and have the kids roll them in a little water then carob, and coconut, and cinnamon, yummy
I think some onion bread sandwichs with tons of fresh sprouts, and veggies, or mini pizzas, the kids could make their own toppings. etc.

You know, I've never made that onion bread. I keep hearing about it, and have been meaning to make it. I think it's time...

I would love to make some things to take to my moms house on Easter...my family will be camping until Saturday.....but coming home to celebrate Easter Sunday with our family.....so I need some ideas that are quick, and maybe I can make ahead of time and keep them in the fridge until Sunday.....

I'm making the nests by using this macaroon recipe and making them into nest shapes:
Adapted from www.fromsadtoraw.com
2 1/4 c. shredded coconut
2 Medjool dates
1/4-1/2 c. agave
1 tsp vanilla
Blend ingredients in food processor. Shape into nests. Add more agave to mixture if,it doesn't easily stick together.
Dehydrate at 105 degrees for 8 hours+.
Carob Eggs:
2 c walnuts
1/2 c raisins (or dates but I don't like em)
carob...unsure of amount
squirt of agave
T cinnamon
Blend. Make into ball shapes, indent, and fill with cream. Then seal and squish a bit to create a more egg-like shape. Can roll in coconut, nuts, etc. Chill in freezer.
Cream:

1 c cashews
3 T orange juice
2 T agave
Blend.
or you could use Alissa's cream cheese recipe, pg 319. :)

Here's something I came up with this morning. It is really fresh tasting. The lime and cardomom really make the difference.
I made a dressing (just pureed in a Vitmix) from:
1 cup of Thai coconut meat
1 cup pineapple
1/4 cup cashews, soaked for 4 hours
1/4 tsp. cardomom
2 T. honey
1 tsp. sea salt
1 tsp. lime zest
2 T. coconut water
Then tossed it in a bowl with:
1/2 green cabbage (about 5 cups), chopped
2 1/2 cups pineapple, cubed pretty small
1/3 cup dried coconut flakes
3 T. chives, snipped very fine

OMG maraw, that looks delicious! What a beautiful presentation too.
As for easter recipes, we are having a raw food potluck this weekend, and I plan to bring a broccolli cheese casserole. Very simple just chopped, marinated broccoli with a pinenut/sunflower cheddar sauce. There will be a mock ham there too. I'm going to try to snag that recipe.

Just an update...I made the nest and eggs I posted the recipes for earlier and they were SOOOO fabulous! Not too sweet, just perfect. I'm so proud b/c this is my first raw invention. Pictures coming soon...
