Hello, well I have been palying around with this recipe. I was wondering if anyone has found a way to firm up the filling ? I have added more pecans to the crust to make it stiffer and removed the apple juice and replaced with only half the amount in water ( I didn't like the apple juice taste )
....or am I doing something wrong here ? :(

Is anyone else making banana cream pie that sets up ? Thanks !

I have read that many add a bit of coocnut oil

Hi, yes I read that too and added it but perhaps not enough? I added more tonight and have it in the fridge to hopefully firm up !

My pie set up, but if yours won't then why not stick it in the freezer. It'd be YUMMY frozen!

I add cashews to my banana cream pie, although It's not Alissa's recipe, it does firm up, you might try this.

Well, this wont help with your question, but I just make the filling and it like a banana cream pudding as the crust is a bit too rich for me and it is yummy. It also seems to set up after it is refridgerated.

I also make this as a pudding so that won't help much either! I've also frozen it and yes it is so good this way too.

I had the same trouble in the beginning and can confirm that coconut oil is THE way to firm up banana cream pie. Leave it a while in the fridge afterwards and then you can cut it into proper slices.

Blueberries processed and blended in with the bananas. Alissa says they have a lot of pectin and so set up nicely.

Are you putting it in the fridge??? Seems like I had to put a banana/mango pudding pit in the freezer and freeze it for an hour or so, and then thaw it in the fridge to get it to "set"...hope that helps...I would also like to try a raw pie that slices nicely!! (any suggestions??)

I just wanted to follow up on my latest change in recipe. It was a huge success ! I can't wait to make it this weekend and serve it for Easter ! It firmed up really nicely without the apple juice and 1/2 the amount of water along with 2 tablespoons of coconut oil. I'm going to go have the last slice for dinner right now ;) !
