One of my favorite (pre-raw) restaurants has offered to include a RAW food option on their Spring menu upon a woeful e.mail request. I'm so excited about it, but what should I tell them to uncook up?!

If you could only pick one raw dish what would it be?

Your favorite recipes requested!

date nut tourte :D

and then, of course, wonderful amazing humongous salads! .. but maybe thats a no-brainer :p

hmm and what about smoothies? fruit smoothies..GREEN smoothies! (though i doubt many non-raw people will want to chug down something green. theyre missin out though! )

or or or a beautifully arranged in-season fruit plate! or veggie plate. or fruit AND veggie plate. with yummy raw dippings like a cheese dip or nut butter dip.

or those ice cream sandwhiches i think RP posted. (was it RP? )

fresh juices too.

ok ok sorry you said ONE thing :p :) ill go now hehe :D

Thanks for the suggestions EYB! You sound like you've got a raw high, eh? :)

Those icecream sandwiches that were posted look awesome- great idea. I've been thinking about making those myself!

You have to look at this from their point of view because the easier it is for them, the more likely they are to stick with it. You need to pick something for which thay have the ingreedients already, or if not, then ones with a long shelf life. Get their current menu and work out what they have hanging about in the kitchen and work from that. It would probably be easy for them to make a raw soup.

Exactly what I was thinking, Sport. They also own the organic grocery store next to the restaurant too. They sell raw chips and agave and even have young baby coconut.

I've already made the suggestions- as I wanted to get back to him before the idea left his mind.

I suggested the stuffed ravioli with seed & nut cheese with heirloom fresh marinara sauce from greenchefs.tv (fairly easy to make and even non-raw folks should enjoy it)

Alissa's mock salmon pate served with raw chips, cucumber, bell pepper and celery

baby green salad with a raw dressing

strawberry romanoff (I've been eating this stuff up!) :p

What do you think?

I would definately go with this creation. I made it the other night but I only had red cabbage so I threw in Kale for the other cabbages--it was so great. This is such a fun dish with the coconut as the noodles. The sauce is so delicious--I have made some to put on other salads HEHE.
With the Kale it is even more nutricious, filling, and a raw dish that accentuates the vegetables' flavors not trying to be something else.
They should have all the items available.
