I bought barley today so I could try Alissa's chili. The only barley they had was "pearled"...is that the same thing as hulled...or am I way off and wasted the $$$ on them?? Thanks.

Pearled barley tends to be a little more buffed... it should still work though. Hulled barley is light brown and quit a bit bigger than pearled barley. I would say it should still absorb water and can be usable, but look for hulled barley next time!

From: http://www.whfoods.com/genpage.php?tname=foodspice&dbid=127

"Barley can be found in the market in various different forms:
* Hulled barley: While the indigestible hull of the barley grain is removed, the bran is left intact, so hulled barley features a superior nutritional content compared to other forms of barley.
* Pearl barley: The whole barley grain has be intensely milled to produce pearl barley, which results in the removal of both its outer hull and its fiber-rich bran layer.
* Pot/scotch barley: This form of barley undergoes more extensive milling than the hulled variety, but is still less processed than the pearled form and therefore retains a portion of its bran layer.
* Barley flakes: Flattened and sliced, barley flakes are similar in shape to rolled oats.
* Barley grits: Barley that has been toasted and cracked, barley grits are similar in appearance to bulgar. "

I've never had success with pearled barley. Only the hulled barley from Wild Oats/wherever you get your bulk raw from will sprout. That's my experience, at least.

You can use sprouted wheat berries in the chili, too. They're even more chewy and great.

Here's the deal... hulled barley is to pearl barley what brown rice is to white rice. The white rice and pearl barley are created from the whole grains by grinding away the outer bran layer and the germ (the live part) in order to make a "purer, whiter" food product. The finished product is also one in which most of the essential nutrients have been removed. And FWIW, I suspect the milling generates a lot of heat, so I would not be surprised if the pearl barley were no longer raw, even if not deliberately cooked. But it's easier to chew and nicer to look at, so that's what has become dominant in the marketplace.

The hulled barley is also available in the bulk bins, often right next to the pearl barley.

Is "sprouting barley" (that's what the bin says) the same as Hulled barley? The sprouting barley have little papery husks on them.

I order my barley from either www.sunorganic.com or www.sproutpeople.com

Both have small quantities if you are on a budget and want to try something new.

Sprout People have a mix of purple and white barley. It make for very beautiful sprouts.

Hi Sheryl -

so Hulled barley is what I want for sprouting and putting in recipes? I have been using the "sprouting barley" for rejuvelac and it worked fine. My fiancee made a kitchery dish tonight with the same stuff. I will find out in a few minutes if it is edible with the husks....
