For all of you adventurous "cooks" out there, I am working on changing one of the best cheesecake recipes into a raw version. I had always made this in the past for very special occasions. Now I want the opportunity to still make it but do it raw. Would be a GREAT conversation piece for my SAD buds.

I think I can get the cheesecake part down. But I need some help getting the crust, which was really a big taste factor in the original recipe's finished product.

So your challenge, if you decide to accept it (imagine Mission Impossible music playing in the background :cool: ), is to convert this crust recipe to a raw-licious version.

After I get the complete recipe together and tweaked, I'll post it with pictures. :D It's called Mango-Pineapple-Lime Cheesecake with Ginger Crust. Oh my! Just plain sinful.

Here's the original crust recipe:
1 1/3 cups ground gingersnap cookies
1 jar roasted macadamia nuts
1/4 c brown sugar
1.5 Tbs. crystallized ginger
2 Tbs melted butter
Grind everything together in food processor. Push in springform pan and bake for about 8 minutes.

So really....no ideas? :confused: Bummer. I'm telling ya, this cheesecake is to live for and makes a spectacular presentation. Just need a wee bit of help with the crust.

You guys have a raw-vellous weekend. :)

I'll give it a go as soon as I can get to it.

First I have to save the lady in Nebraska with the Pecan Sandies that need sanding.

So much to do, so little time, so few substitutes for Cheetos... <sighhhh>

Ok substitute the ginger snaps with ground oats, add cinnamon and nutmeg
Avacado inlue of butter
Coconut milk for additional moisture before forming
Use fresh unroasted makes or raw cashews
Turbinado for sugar

Here's the original crust recipe:

and here's my version:

1/2 cup macadamia nuts
1/2 cup walnuts
1/2 tsp cinnamon
1/4 tsp cloves
1/8 tsp nutmeg
1 tsp chopped fresh ginger
1/2 cup pitted soaked dates

Put the nuts and spices into the food processor and process until sandy.
Add the dates and pulse until it's mixed.
Press it into the springform pan.
Voila!

Thanks guys! I am going to be experimenting and will let you know how it turns out. I'll post pictures and the recipe if it's yummy. I'm sure it will be.
