For all of you adventurous "cooks" out there, I am working on changing one of the best cheesecake recipes into a raw version. I had always made this in the past for very special occasions. Now I want the opportunity to still make it but do it raw. Would be a GREAT conversation piece for my SAD buds.
I think I can get the cheesecake part down. But I need some help getting the crust, which was really a big taste factor in the original recipe's finished product.
So your challenge, if you decide to accept it (imagine Mission Impossible music playing in the background :cool: ), is to convert this crust recipe to a raw-licious version.
After I get the complete recipe together and tweaked, I'll post it with pictures. :D It's called Mango-Pineapple-Lime Cheesecake with Ginger Crust. Oh my! Just plain sinful.
Here's the original crust recipe:
1 1/3 cups ground gingersnap cookies
1 jar roasted macadamia nuts
1/4 c brown sugar
1.5 Tbs. crystallized ginger
2 Tbs melted butter
Grind everything together in food processor. Push in springform pan and bake for about 8 minutes.
