I made this up last night after making pesto stuffed mushrooms. I wanted to use up the stems. :)
2 very large tomatoes
1 clove garlic, pressed
1/2 tsp dried oregano
2 medjool dates
2T olive oil
3 cups chopped mushrooms
whatever pesto was left in the processor bowl after stuffing the pesto mushrooms
Process everything except the mushrooms til pretty smooth, then add mushrooms and pulse til chopped coarsely.
Warm in the dehydrator.
Wow! Taste and texture like meat sauce. And you could top it with raw parmesan cheese.
