I like searching internet for cooked recipes, especially desserts and making their raw versions.
I made this cake yesterday. If you like dried plums, you may give it a try. Hope you'll like it :)
SPICED PRUNE-ALMOND "COFFEE" CAKE
Terrific when served with vanilla "ice cream", and a very appealing breakfast or snack cake on its own.
Cake
2 cups pitted prunes, soaked in orange juice and/or almond milk for 1 hour
1 teaspoon vanilla extract
1/4 teaspoon almond extract
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 tablespoon grated orange peel
Glaze:
1/2 cup avocado
1 teaspoon coconut oil
1 teaspoon raw honey and cocoa
Cinnamon stick (optional)
1/3 cup whole almonds, finely chopped
Orange quarters (optional)
For the dried plum cake:
Blend all the ingredients for the cake. Then spoon this mixture onto the pie plate and press it firmly into the bottom of the pie plate until it is even. Cover the pie plate and refrigerate while preparing the glaze.
For the glaze:
Blend all the ingredients until smooth. Pour this mixture directly into the cake. Sprinkle with chopped almonds. Then place it back in the fridge for 4-5 hrs or overnight.
Serve with orange quarters as a dessert or for breakfast. Enjoy
