I promised my mom I would make her some chocolate---she bought the nibs for me ;)

Hey girl!
Well, I'd probably make the raw chocolate recipe posted in that chocolate-chip cookie thread (but add some agave to taste because it's not sweet) and pour just a tiny bit onto a shallow dish or a plate just for the bottom layer and freeze (or refrigerate) just until hardened. Then, I'd soak some dried coconut (since Almond Joys are kinda moist) and then drain it really well once it's softened, add some agave, a dash or sea salt and mix it up well. Then, put little mounds of that on top of that first layer of chocolate and push some almonds (soaked, then dehydrated so get those ready ahead of time) down inside of the coconut and top with the rest of the chocolate and put back into the freezer or just put into the fridge. You could probably use some candy molds too or even an ice tray.
That's just off the top of my head...not sure how well it'll all work out, though! ;) You could probably also use Alissa's recipe for chocolate in the "Turtles" recipe and follow the same steps (dehydrating it instead of refrigerating it) or something like that.

Grated fresh coconut would work amazingly too! With a little agave mixed in for sweetness. Mmmmm....
