HI :)
Just curious if anyone has ever tried freezing coconut milk and meat? I went a little overboard buying young coconuts (heheee), and I wanted to crack them open and freeze the insides before they go bad... I would think it would be even more delicious in my shakes when the milk and meat is frozen, but I just want to make sure it'll be ok! anyone ever tried this!?

It works great - you could even do the coconut water as ice cubes then use it in smoothies!! It might be a good idea to freeze flat on a plate, then bag it once frozen. That way it doesn't freeze all as one big block!

I just bought one of the young white coconuts at WF and I don't even know what to do with it or how to crack it.

I use a cleaver to open the young thai coconuts (the white ones with the pointy top). It's actually the lower inside corner of the knife I use (by the handle), to make 4 cuts to make a square section that lifts off the top. Sometimes you have to pry it off. Once you get good at this you can open them without spilling any water too.
Others will use a serated knife to shave off the husk on the bottom, cut through the soft eye to drain the water, then break through the shell there. Whatever works best for you.
If you search I think you'll find a more details description of the above posted earlier last year too.
I use young coconuts in noodle dishes, in smoothies and puddings. They are yummy!
Cheers,
Sheryl
