View Full Version : BEST Chocolate Mousse

Hi, I was trying for something else, and came up with this.

it is super YUMMY
and I thought I would share


1 cup water
1/2 cup walnuts (unsoaked)
4 dates (pitted not soaked)
2 T carob/cacao powder
1 inch vanilla bean or 1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp nutmeg

Put 1 cup of water in your Vita Mix, or high speed blender
then add enough walnuts to bring it up to 1 1/2 cups

blend until smooth

add the rest of the ingredients

blend until smooth

if you like it warmish, keep blending

if you like it cool, then pour into four 1/2 cup ramikins or small bowls, and place in the fridge, for at least 1 hour until cool.

This is so smooth and creamy, you won't believe it, it's even frothy, like real mousse.
mmmmmmmmmmmmmm

when our mint comes in, we'll be making it chocolate mint.

if you don't add the cacoa, then it is vanilla pudding.

okay, just wanted to give an update.

Dragggon said this tastes like the best chocolate mousse he ever had in a fancy shmancy restaurant, and I froze one just to see how it was and man oh man it is SOOOOOO great, it is thick and creamy and super delicious frozen, I mean it is better than any fudgecycle on the planet.

and cooled it is a super creamy and fluffy pudding/mousse, and fresh out of the blender, it is a little warm, and tastes kind of like cake mix batter,which I used to really love.

so if you are into chocolate decadance, then this may just be the one for you.

I will skip my green meal for "chocolate decadence " ;) and being Raw I can do this without fear of it be detrimental to my body !

Wow, amazing! I had all of the ingredients for this and made some last night. I ended up eating all of it right then! (I need to gain weight, so it's all good.) Whoa, that's one of the best raw desserts I've ever eaten. A huge hit with my toddler too, though sharing it wasn't what I really wanted to do :)

thank you all, I'm so glad you liked it, I was working on a frapuccino recipe for another thread, and this happened, anyway, it IS good isnt' it?

I love it, have made it about 3 times now, and it is extremely excellent frozen, oh YESSSSSSSS

I just wanted to say thankyou,

I am often missing mousse (especially) the texture, but so many are made with avocado and I am allergic to it in a big way, so this was perfect, I made it last night and it really hit the spot, I'm going to try freezing it next!

Wow, that is good! I didn't have any chocolate so I made the vanilla version and also used pecans instead of walnuts and it was really fantastic. My husband couldn't believe it was raw and had no cream and refined sugar in it! Great dessert to serve up to people who don't realize how delicious eating raw is.

I made the mousse and mine is very smooth but the texture is the texture of salt. Kind of grainy. Is this the way it should be. Love the taste but I do taste the cinnamon. Is this the way it should be. Thanks, Cindy

Hi, and thanks everyone.

Cindy, if you use a high speed blender like a K-tec or Vita Mix, and mix the walnuts with the water first, it becomes smooth, then add your other ingredients, the cinnamon is a way to bring out the chocolate flavor, you may try using less if you don't care for it,

I love cinnamon so, it's a plus for me.

the great thing about this recipe, is you can sub nuts of your choice, except brazil nuts and almonds would be grainy, but pecans, walnuts, pine nuts, cashews (soak cashews first) would be smooth,

also you can add what ever flavorings you like, almond, vanilla, chocolate, mint, lemon, etc,
you can add lemon juice and zest for lemon mousee, you could add mint and cacoa for chocolate mint mousse, etc.

oh, also if you don't get the cacao nibs ground fine, they could be grainy, I used a coffee grinder, that I only use for cacao, then my Vita mix and smooth it was, gonna' go have one right now, for breakfast, mmmmmmmmmmmm

Awesome recipe!! This is going to be a perfect recipe to make for Passover. I'm dreading having to live without Tahini, sesame seeds, sunflower seeds and flax seeds for an entire week. This will make it easier to bear. I'm going to be sharing this with my entire (non-raw) family! Many, many thanks!!

I just made this using Pecans because I did not have any walnuts, it was very yummy!! I will have to pick up some walnuts to compare!!

oh yeah, that is what I'm talking about!! Thank you for that recipie. I tried it with almonds just tonight, before I read the thread, and yes, it is grainy... so I will try it with walnuts when daylight hits. ... I'm having one of those 3am days. Just couldn't sleep. :rolleyes:

How did this recipie EVER make it to your freezer!?!? I dont think the batch I made is going to make it into a bowl, straight from the blender!! :D Very yummy!!

Well, you've done it again! Thank you for another fabulous recipe... I just made it and have it setting up in the freezer but keep sneaking tastes! I had run out of dates so I used raisins and it is delicious, I'll get more dates today as I do like them even better for sweetening than raisins and make another batch. And I LOVE cinnamon (could you have guessed this??) and put it in most everything so I added plenty and it reminds me of a rich Mexican chocolate dessert I had years ago that was oh soooo good!

Yep, I must admit, my mistake (as this was supposed to be something else) turned out okay after all.

Actually I love it, I've made it about a dozen times so far, I really like it frozen in the ice cream sandwiches better than the banana ice cream, which was very rich also.

gotta' love RAW!!

RawPriestess, OH is that good & sooo easy to do. No-mine did not make it to the "chillin" stage. :p Dh has tasted his & has it chillin-but I may eat it while he's nappin ;)
thanks for sharing the recipe..I can think of a ton of things to do with it-parfaits w/fresh fruit/frozen pies...etc... :D

Oh YES, lanasq,

I've already made ice cream sandwiches,
pies,
parfaits, with fresh fruit, and macademia nut whipped cream
layer it between two cake layers
frozen and made ice cream cake
covered strawberries with it,
covered bananas with it
dipped apricots in it
used it as a fruit topping,
as a fruit bottoming-LOL
as a dip for fruits
by itself, as a cake frosting
as an ice cream
but mostly, I just eat it out of the blender,

YEP, I just eat it up, yummy

So I just had to try this in an ice cream sandwich cookie, so I had a few strawberry ice cream sandwiches in the freezer. I dismantled one of them, and made an open faced sandwich using this mousse and wow is it yummy! Now back to the other half with the strawberry ice cream, you know what I am eating all day long don't you! Ha!

Edit... I just read your idea of dipping strawberries in this, that is next to try!

Oh Cinnamon, I am so happy that everyone seems to like this so much, I've been raw for a while, so I thought maybe my taste buds had exploded or something, but my hubby can't get enough of this either.

it is excellent as a fresh fruit dip for sure,

I love the fluffy texture, I was so surprised. mmmmmmmmmmmm
also good in other flavors too. But the chocolate is my favorite.

I just made this without the chocolate... and used it as a filling for Alissa's strawberry crepes!!! SSOOOOO GOOOODDD!!! MMMM :D Definately a winner!

i just added some ice to this recipe... blended it all up.. and viola... a delicious chocolate shake!! (i didn't even add the cinnamon and nutmeg and it still tastes incredible!!) yummmmmmmmy!!!! thanks so much rawpriestess!!!!

I have two PROBLEMS with this recipe :mad:

#1 - in the three steps it takes to get from the vita-mix to the fridge, 1/2 the bowlful disappeared

#2 - everything needs to be multiplied by 4... at least if I want to have this as a snack for myself... x 20 if I think I'm going to share it with my family.

Keep sending us your flops RP :p

I am eating some frozen right now, but you are all RIGHT, you do need to make triple or quadruple batches, it goes mighty quick in this house, I haven't been able to make ice cream sandwiches with it for a week, I just keep eating the ice cream plane, and the cookies plane, LOL

Dontcha love raw?

Gotta bring this one to the top again, I just made some and have it in the fridge to chill for dessert tonight. It really is so good, creamy as can be and reminds me also of chocolate cake batter. Yum!

Added this evening: I made banana ice cream and used this as a chocolate topping. It is DELICIOUS!

Well I finally had the chance to try this, and it is nice. I like the extra flavors that the cinnamon and nutmeg add. I am dipping my strawberries in it! Now I will have to try the ice cream sandwiches. ;)
