Greetings,
I love eggplant, and i am looking to find ways to prepare in my raw dishes.
Any suggestions? :confused:

I'm not that big on the eggplant bacon recipe (btw, Vickie...if you do a quick search for "eggplant bacon" it'll come up) but I have made and liked "terriyaki jerky" with it!
I peel it and slice it up...not too thin and not too thick into either length-wise strips or in rounds; marinate it in mixture nama shoyu, ginger, little agave or date paste, cayenne, garlic powder and a little olive oil overnight; then dehydrate until it's nice and tough! You can leave it in as little or long as you prefer...I just prefer mine "well done".

Thanks RP and eveyone for the replies and suggestions,:-) But that i was looking for more of something for a main dish type of way for the eggplant.
