I want to make the herbed cheese spread today BUT I do not have spinach at the moment.
Is there something I can substitute with, or can I leave it out completely? I have kale, lettuce and swisschard at the moment.
Thanks.. any suggestions would be appreciated. And if you must, you can say "No!! It must be spinach, go get some NOW!" :D

heabrook, i'm not maraw (obviously ;) ), but generally speaking, swiss chard and spinach are pretty much interchangeable, taste-wise. you might just want to cut away the thick stems.

Great. Thanks for your reply! :) I agree, I think it would probably be okay to use swiss chard instead of spinach. I'll post again after I make it and let everyone know how it tastes with swiss chard.

UPDATE:
I used the swiss chard and it turned out great. I put a bit too much of the herbs province though! So it is REALLY herby but really good. Next time, I'll put less of that.
Can't wait to serve it to hubby when he gets home!
I also made the mock chicken salad too. Thanks for the recipes Maraw! I'm waiting for my bananas to ripen to make the lemon chewies :D

Oops! Sorry I missed this thread.
I hope all turned out well for you. You made some of my absolute favorites. I have never tried substituting the spinach, but it is good to know the swiss chard works well with it too. I've always thought that recipe was better tasting the next day. What do you think?
How did the chewies turn out?

The herbed cheese spread was great. And I agree, it does taste even better the next day.
The chewies came out great. They didn't last long though :) I didn't have exactly 2 C of Cashews so I used some almonds too.
I also tried your mock chicken salad and it was really good.... We had it stuffed in tomatoes and avocados. It tastes wonderful with avocado, the flavors blend nicely.
